They had an indoor area where they presented the whole shoulder and removed select pieces for me to eat. I also judged their sauce. After this experience I believe that this is the only way to eat BBQ! We scored on a scale of 6 to 10, but during the judges' briefing were told that the best of the 3 we judge would get a 10 and with all of the effort and expense that the teams put into this event we should only score as low as an 8. If it were me I'd let the judges score on a scale of 1 to 100. As it was this team's shoulder was tender, juicy and cooked perfectly, but their choice of a runny vinegar-based sauce and mild dry rub wasn't to my liking. They also needed to brush up on their presentation skills. In the end I judged them the lowest of the 3. Crossroads Cookers II did not place in the top 10 in this category which had 79 entries, but they did take 8th in the rib category which had an amazing 105 entries.
